About The Meal Makeover Moms

Janice Newell Bissex and Liz Weiss are registered dietitians and The Meal Makeover Moms.  As two of the nation’s top experts on family nutrition, they’re on a mission to help busy families eat better.  Their journey began in 2004 with the release of The Moms’ Guide to Meal Makeovers, Improving the Way Your Family Eats, One Meal at a Time.  The book highlights their simple food philosophy that kids – even picky ones -- will eat nutritious food without complaint as long as it looks and tastes great.  To do that, The Moms give family-favorite recipes a healthy makeover by "weaving in" fruits, vegetables, whole grains, healthy oils and more.  Their recipes are easy to make, appeal to kids, and make mealtime less stressful for parents who want their families to eat more than the chicken nuggets and mac & cheese that often end up on the table.

Along with their book, they launched the online Meal Makeover Moms’ Club and MealMakeoverMoms.com in order to expand their outreach to a public hungry for sound advice on feeding kids and families.  Their website provides a virtual smorgasbord of helpful tools including recipes, cooking & mealtime tips videos, a bi-monthly newsletter, a blog, and the weekly radio podcast, Cooking with the Moms

Janice, the mother of two girls, and Liz, the mom of two boys, understand, through years of personal experience, the daily challenges parents face when mealtime rolls around.  That’s why their recipes are all mom tested and kid approved, and their mealtime tips are realistic and practical.  The dietitian duo wants to make a positive impact on the way families eat, so whether you send them an email, attend one of their Meal Makeover Mom Cooking Parties, or run into one of them at the grocery store, you are sure to receive a plateful of ideas and encouragement as you begin your journey to better family nutrition.

Blueberry Banana Pancakes
Makes fifteen 4-inch pancakes, 4 to 5 servings

1 ½ cups all-purpose flour
1/3 cup wheat germ
1/3 cup quick-cooking oats
1 tablespoon baking powder
½ teaspoon ground cinnamon
1/8 teaspoon salt
2 large eggs, beaten
1 ½ cups 1% lowfat milk
1 ripe banana, mashed (about ½ cup)
2 tablespoons pure maple syrup
4 teaspoons canola oil
1 cup frozen or fresh blueberries

1. Whisk together the flour, wheat germ, oats, baking powder, cinnamon, and salt in a large bowl until well combined. Set aside.

2. Whisk together the eggs, milk, banana, and maple syrup in a medium bowl until blended.

3. Pour the liquid ingredients over the dry ingredients and stir until just moistened.

4. Meanwhile, heat 1 teaspoon of the oil in a large nonstick skillet or griddle over medium-high heat. Use a 1/4-cup measuring cup to pour the batter onto the hot skillet or griddle, forming 4-inch cakes. Using a spoon (so your fingers don’t turn blue), arrange the blueberries evenly on each pancake. Adjust the heat if the skillet gets too hot.

5. Cook until bubbles begin to appear on the surface of the pancakes and the bottoms turn golden brown, 2 to 3 minutes. Flip and cook until golden brown, an additional 2 to 3 minutes. Repeat with the remaining oil, batter, and blueberries.

Breakfast Tip

While ready-to-eat and hot cereals provide a bowlful of good nutrition (especially when they’re made with whole grains), don’t feel guilty if you occasionally enjoy last night’s dinner leftovers for breakfast!  A slice of cold pizza may not appeal to moms, but if it gets kids in the habit of eating breakfast, be flexible and enjoy.

We also talked about smoothies in this show!
