Shredded Au Gratin Potatoes

Servings: 8-10

Why I Like It: This is a delicious side dish for brunch or dinner, as long as you aren’t counting calories. Others always ask for this recipe and are surprised that it is made up of 3 main ingredients. It requires a lot of manual grating so I take a shortcut by using a grater attachment on my food processor.

Ingredients:
8 medium baking potatoes
2 cups (8 ounces) sharp cheddar cheese, shredded
2 cups heavy whipping cream
1 teaspoon salt
1/4 cup breadcrumbs
1 tablespoon butter, melted

Directions:
Peel potatoes and place them in a large pan, cover with water. Bring to a boil; cover. Reduce heat and simmer 10 minutes. Drain, cool and shred. Alternate 2 layers of potatoes and cheese in a lightly greased 2 1/2 quart casserole. Combine cream and salt. Pour over potatoes. Sprinkle with crumbs. Drizzle with butter. Bake uncovered at 350 degrees for 45 minutes.
