
Favorite Salad Dressings

Why I Like It: I have vowed to never buy prepared salad dressing again after discovering how easy it is to make my own! Using a canning jar, I throw in the ingredients, screw on the lid, shake, and enjoy over the next few weeks. It is extremely simple and more tasty than the store-bought brand in a bottle! These dressings can also double as a marinade for meat - bonus!
Honey Mustard Dressing
Ingredients:
1 cup oil (I use light olive oil)
1/4 cup red wine vinegar
1 tablespoon minced onion (or shallots or red onion)
1/4 cup honey
2 tablespoon dijon mustard
Directions:
Add all ingredients to a jar or bottle with a tight-fitting lid. Shake to mix. Chill.
Sweet Vinaigrette
* I use this dressing for a tossed green salad with mandarin oranges and toasted almonds.
Ingredients:
2/3 cups olive oil
1 - 3 tablespoons sugar (to desired sweetness)
1 teaspoon salt
1/4 teaspoon crushed red pepper
1/3 cider vinegar
1 tablespoon parsley
1/4 teaspoon pepper
Directions:
Combine all in a jar or bottle with a tight-fitting lid and shake. Chill for 2 hours.
Emeril’s Balsamic Vinaigrette
Ingredients:
1/4 cup balsamic vinegar
2 teaspoons dark brown sugar
1 tablespoon chopped garlic
1/2 teaspoon salt
1/2 teaspoon pepper
3/4 cup olive oil
Directions:
Add all ingredients to a jar or bottle with a tight-fitting lid. Shake to mix.
Southwestern Salsa Dressing
Ingredients:
1 small tomato, finely diced
1/4 medium onion, finely diced
1 clove garlic, minced
1/4 bell pepper (red, yellow, or green), finely diced
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon water
salt & pepper, to taste
handful of fresh cilantro, chopped
Directions:
Combine all ingredients in a jar or bowl with a tight-fitting lid. Chill while preparing the rest of the salad.
