Indian Chicken Curry

Why I Like It: I’ve made this at least 100 times! We just love it. It is my Mom’s and my Mother-in-Law’s favorite dish too.
Ingredients:
3 tablespoons butter
1 small onion, chopped
4 cloves of garlic, minced
3 tablespoons of curry powder
3/4 teaspoon ground cinnamon
1 teaspoon paprika
1 bay leaf
1/2 teaspoon fresh ginger
1/2 teaspoon sugar
salt & pepper to taste
2 chicken breasts, cut into small pieces
1 tablespoon tomato paste
1 1/2 cup whipping cream
1/2 teaspoon cayenne pepper (I omit for Aidan. It’s already a bit spicy from the curry.)
basmati rice, steamed
Optional: cashews, golden raisins, steamed broccoli or chopped cooked spinach, diced cooked potatoes.
Directions:
Heat butter. Saute onion. Add garlic and next 7 spices. Add chicken, tomato paste and cream. Simmer for 20-25 minutes until chicken is cooked through. Add a little extra cream if you prefer it thinner. Remove bay leaf. Add cayenne pepper. Simmer 5 more minutes.
Toss in optional ingredients of choice. Serve over basmati rice. |
