Gorgonzola Stuffed Potatoes

Why I Like It: We love cheese, even strong kinds of cheese! It’s easy and great with a big salad and flank steak. This is a great variation on the original twice baked potato.

Ingredients:
1/4 cup (1 ounce) gorgonzola cheese, crumbled
1/2 cup sour cream
1/2 teaspoon black pepper, divided
1/8 teaspoon hot pepper sauce
6 slices bacon, cooked and crumbled
2 tablespoons chives, minced
12 small red potatoes
1 tablespoon olive oil
1/2 teaspoon salt

Directions:
In small roasting pan, toss potatoes with oil. Season with salt and 1/4 teaspoon black pepper. Bake 400 degrees for 30 minutes or until tender.

Blend gorgonzola cheese and sour cream. Stir in remaining black pepper, hot pepper sauce, bacon and chives.

Split potatoes lengthwise in halves. Scoop pulp from center of each potato half, leaving shell. Fill shell with dollop of cheese mixture.

Variations:
• Substitute bleu cheese.
• Add chopped, toasted walnuts.
• Add some potato pulp into mixture.
