Mediterranean-Style Green Beans

Why I Like It: This is a fresh and healthy combination! Green beans are my favorite vegetable anyway . . . and this makes a quick side dish. I always have frozen green beans on hand, as a "back-up" to fresh. I've used canned green beans, as the recipe calls for, on occasion.
Ingredients:
1 (14 ounce) can green beans
1 tablespoon olive oil
1 small clove garlic, minced
1 medium fresh tomato, chopped
2 teaspoons dry oregano (or use fresh!)
1 (4 ounce) package feta cheese, crumbled
Directions:
Prepare green beans according to desired method. Drain, if needed. Pour olive oil in saute pan; add garlic; cook for 1 minute. Toss in green beans, tomatoes and oregano. Mix until heated through. Remove from heat and sprinkle with feta.
Serve immediately.
Serves: 2 - 4
