Why I Like It: This one is a crock pot recipe and is always a huge hit at gatherings since toppings can be varied to individual liking. Nothing fancy here. Most ingredients are usually on hand.
Ingredients:
Into crock pot:
4 chicken breasts
2 (15 ounce) cans black beans, undrained
2 (15 ounce) cans Mexican stewed tomatoes, (or regular diced tomatoes)
1 cup (or more if you want) salsa
4 ounce can green chilies
1 (14 ½ ounce) can tomato sauce (I don’t use this all the time - I add more salsa or tomatoes) Garnish: tortilla chips, grated cheese, sour cream
Directions: Cook on low 8 hours. Remove chicken breasts and shred back into pot. To serve, place chips in bowl, cover with soup and toppings.
