Easy Italian Tomato Sauce

Source:
Listener, Katie

Why I Like It:
This is a very tasty sauce by itself - but I am sure you can experiment with your own ingredients. I always add about a half pound of ground beef, browned.

Ingredients:
2 tablespoons olive oil
1 cup onion, chopped
1/2 cup green pepper, chopped
2 large cloves garlic, finely chopped
2 cans (16 ounces) diced tomatoes, undrained
2 cans (8 ounces) tomato sauce
2 teaspoons basil
1 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper

Directions:
Heat oil in 3-quart saucepan over medium heat. Cook onion, green pepper, and garlic in oil for a few minutes, stirring occasionally, until tender.

Stir in remaining ingredients. Heat to boiling, then reduce heat to low. Cover and simmer 45 minutes. Use sauce immediately, or cover and refrigerate up to 48 hours or freeze up to 2 months.
