Chicken a la Potpie

Why I Like It: This is the perfect one-pot meal for entertaining. Everyone enjoys comfort food; It can be made in advance; And it’s very easy to make. What’s not to love?
Ingredients:
3 pounds chicken pieces
3 cups chicken broth
1/2 cup chopped onion
1 cup diced celery
6 tablespoons melted butter, (3/4 stick)
6 tablespoons flour
1 cup heavy cream
1 teaspoon freshly ground pepper
1 package (10 ounces) frozen peas and carrots
Serve over: biscuits, puff pastry, noodles or toast
Directions:
Simmer the chicken, broth, onion and celery in a covered pot until the chicken is tender, about 30 minutes. When the chicken is cool enough to handle, shred it. Bring 3 cups of the broth to a boil. Add peas and carrots. In a small bowl, mix the flour and melted butter to form a paste (roux). Stir the paste into the boiling broth and stir constantly until the mixture thickens. Stir in the cream and pepper and simmer for a few more minutes. Spoon the sauce over your favorite bread or noodles.
