Corn Griddle Cakes

Why I Like It: This is usually popular with kids since corn is such a sweet and yummy vegetable for them. Serve as an accompaniment or on their own.

Ingredients:
12 ounce canned corn
2 tablespoon cornstarch
2 tablespoon cornmeal
2 large eggs, beaten
small sprig of chives
pinch of salt and pepper (optional)
corn oil, for frying


Directions:
Mix cornstarch, cornmeal, salt and pepper in bowl. Stir in eggs, chives and then corn. Heat oil in large non-stick pan. Put 4 single tablespoons of mixture into pan, well apart, and flatten slightly. Cook about 4 minutes and then flip for another 2 or so. Drain on paper towels and keep warm while cooking remaining mixture. Serve with ketchup or plain.
