Orzo in Brodo

Why I Like It: I listened to the show with the nutritionist (Nutrition Matters with Lauren Niemes). I have a good recipe that I got with Weight Watchers that uses Arugula. Very, very tasty. Thought you would like it.
Ingredients:
12 garlic cloves, roasted (see below) and peeled
¼ teaspoon salt
3 cups chicken broth
1 cup cooked orzo (1/3 cup of dry orzo before its boiled)
1 ½ cups arugula, chopped
Fresh ground pepper to taste
Directions:
Puree garlic, salt and ¼ cup of the broth in a food processor. Put the remaining 2 ¾ cups of broth in a saucepan. Stir in the garlic mixture and bring to a simmer. Stir in the orzo, arugula, and pepper and heat to serving temperature.
Roasted Garlic Directions - Take one head of garlic and cut the top off about 1/8-1/4 of an inch down until the individual cloves are exposed. Drizzle with olive oil, and sprinkle with basil & dried rosemary. Wrap in foil and bake in oven at 425 for about 45 minutes, or until cloves are squishy and slightly browned. Cloves will squeeze out of their skins (be careful, it is hot).
