Spinach Quiche

Why I Like It:
It’s fool-proof and easy. It makes a lovely main course for any meal of the day. It can be easily prepared the night before if you are serving it for breakfast.

Ingredients:

1 Pillsbury single pie crust
1/2 cup onion, chopped
8 eggs
1/2 cup sour cream
1/2 cup half-and-half
1/4 teaspoon salt
1/8 teaspoon white pepper
3 cups lightly packed fresh spinach, chopped
2/3 cup mozzerella cheese, shredded
1/2 cup Swiss cheese, shredded

Directions:
Prepare the pie crust according to box directions.

Meanwhile, in a small saute pan cook onion until tender. In a medium bowl, beat eggs slightly with a fork. Stir in sour cream, half-and-half, salt and pepper. Stir in onions, spinach and cheeses.

Pour egg mixture into the hot, baked pie crust. Bake at 325 degrees for 45 minutes until a knife inserted near the center comes out clean. If needed, cover edge of crust with foil to prevent overbrowning.

Let stand 10 minutes before serving. Makes 6-8 servings.
