Baked Parmesan & Spinach Dip

Servings: 10-12
Why I Like It: A hit at every family party! People rave over this. Watch out, it’s addicting. (I can make an entire meal out of this dip.)
Ingredients:
1 (8 ounce.) package of cream cheese
1 1/4 cup heavy whipping cream
1/4 teaspoon salt
1/4 teaspoon white pepper
2 cups shredded parmesan cheese (not canned)
1 dash hot sauce
1 tablespoon olive oil
1/4 cup diced onions
2-3 minced garlic cloves
1/4 cup diced red peppers
1/8 cup diced green onion
1 small package of frozen spinach, thawed and drained (Use a large package if you prefer heavy spinach.)
Directions:
Let cream cheese sit out at room temperature. In a large saucepan, combine whipping cream, salt, and pepper. Heat for 6-8 minutes. Reduce volume by 1/4. Add parmesan, hot sauce, and cream cheese. Mix until smooth and melted. In a separate saute pan, heat olive oil. Add onions, red bell pepper, green onions, and garlic. Cook 2 minutes. Add sauteed vegetables to the cheese mixture. Add the spinach. Mix well. Transfer to a large baking dish and bake at 350 degrees for 20-25 minutes, until bubbly and hot. Serve with tortilla chips or a sliced Italian loaf of bread. Another option is to slice bread into 3/4 inch slices, spread with garlic butter, and toast until golden. Dip will keep for 1 week.
