Homemade Chewy Granola Bars

Servings: 24 bars
Why I Like It: This is Doug’s favorite breakfast, snack, and dessert! It’s easy, nutritious and fun to make with Aidan. The best part is that you can throw in whatever you have on hand and omit whatever you don’t like and it still turns out good. I have adapted this recipe each time I’ve made it based on what I had in my pantry! I found this recipe in a cookie cookbook. Does that tell you how yummy these are?
Ingredients:
1 cup firmly packed brown sugar (light or dark)
2/3 cup peanut butter
1/2 cup light corn syrup (I use honey too.)
1/2 cup margarine or butter, melted
2 teaspoons vanilla
3 cups quick-cooking oats
1/2 cup coconut (optional)
1/2 cup shelled sunflower seeds
1/2 cup raisins
1/3 cup wheat germ
2 tablespoons sesame seed
1 cup semi-sweet chocolate chips (or any other flavor of chips)
Directions:
Heat over to 350. Grease 13x9-inch pan. In large bowl, combine brown sugar, peanut butter, corn syrup, butter and vanilla; blend well. Add all remaining ingredients; mix well. Press evenly in greased pan. Bake for 15-20 minutes or until light and golden brown. Cool 1 hour or until completely cooled. Cut into bars.
