Focaccia Bread

Why I Like It: I don’t work with dough! I don’t have the patience to form, shape and bake loaves of bread. (I leave that up to Doug, the baker of the house!) Since we HAVE to have bread with every meal, this is my thing! It’s easy as pat-a-cake! You pat the dough right onto a baking sheet. That’s my style . . . Aidan calls it “cheesy bread”.
Ingredients:
2 3/4 cup flour
1 teaspoon salt
1 teaspoon sugar
1 tablespoon active dry yeast
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
pinch of pepper
1 tablespoon olive oil (for dough mixture)
1 cup warm water
2 teaspoons olive oil (to brush on top)
1 tablespoon parmesan cheese
1 cup mozzarella cheese
Directions:
In a large bowl, mix flour, salt, sugar, yeast, garlic, oregano, basil and pepper. Mix in oil and water. When dough has pulled together, turn out onto a floured surface and knead until smooth and elastic. (I use my Kitchen Aid mixer for this! I don’t knead . . . )
Oil a bowl and place dough in. Turn to coat with oil. Cover with damp cloth and rise 20 minutes. Preheat oven to 450 degrees. Punch dough down. Place on greased baking sheet and pat into 1/2 inch thick rectangle. Brush with oil and sprinkle with parmesan and mozzarella. Bake 15-20 minutes. Serve warm.
